First isolated in 1881 from lupine seedlings, phenylalanine is one of several essential amino acids for fowls and mammals; i.e., they cannot synthesize it and require dietary sources. Microorganisms synthesize it from glucose and pyruvic acid (products of the breakdown of carbohydrates). The chemical structure of phenylalanine is
